20 in 30 challenge | January - green salads. I am challenging myself to eat 20 green salads in 30 days this month. Here is an update on my progress.  | realfoodsimple.com

This year, each month, I am doing a 20 in 30 challenge: challenging myself to do something healthy for 20 out of the 30 days of each month. For January I chose to do green salads.

I chose to do green salads because I wanted to do something that would add healthy foods to my everyday diet. Something that would increase the nutrients I have each day.

We are over half-way done with the month and I wanted to update those of you who do not follow me on instagram on my progress.


As of today I have done 15 out of my 20 days!

Here is a snapshot of some of the salads I have made/eaten this month.


I have been changing up my greens for some diversity. My usual go-to greens are romaine and iceberg lettuce. We also do a lot of spinach on our house, but it is usually frozen and thrown in smoothies or casseroles.

I have been experimenting with buying more fresh spinach. I have also bought dandelion greens and turnip greens. Each one gives a unique flavor to the salads.

For dressings, it varies. I did make big batch of my blue cheese balsamic vinaigrette and used that for several days, as well as sesame ginger, and 4 ingredient lemon ginger.


Doing a 20 in 30 challenge is a great way to make healthy habits each month. Even if one month you are not successful with your health goals, you can start anew each month and challenge yourself to be better each day.

I encourage you to do your own 20 in 30 challenge. Whether it is the same challenge I am choosing, or if it is unique to you and your situation, just challenging yourself in little ways will have great benefits on your health.
