I know you are thinking that these must be unhealthy with dulce de leche in the title. But I can assure you they do not have much added sugar at all and are super moist even though they are made with whole wheat flour.

These are really easy, healthy, low in sugar, and the best part? You only use one bowl.

With only have 7 real food ingredients, they can be made start to finish in 20 minutes!

Ingredients


1 cup pureed apple, not applesauce
2 eggs
2 Tbsp dulce de leche*
1/3 cup plus 1 Tbsp coconut oil
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups white whole wheat flour

Directions


Preheat oven to 350 degrees.
Grease a mini muffin tin or line with paper cups.
In a large bowl, mix the apple, eggs, dulce de leche, coconut oil, baking soda and salt until combined. Add in the flour until just combined.
Scoop ~ 1 tablespoon of batter into the mini muffin tins.
Bake ~12 minutes.

These make ~ 24 mini muffins and only have about 1 gram of added sugar per muffin.




*You can make homemade dulce de leche from a can of sweetened condensed milk. Put it in a pan and cover with water. Heat it to boiling, and then turn down the heat and let it simmer for about 3 hours, making sure it is always submerged in water.
