I have used quinoa in numerous different ways. It is very versatile, has a great flavor, and cooks as easy as rice. I recently used quinoa in place of pasta in this Quinoa "mac" and cheese

I first saw a pizza version of quinoa bites on pinterest (no I was not the creative one to come up with this.) Now these recipes are all over the place. Although I haven't yet made that version, I have made a few different versions of quinoa bites. My other versions are:



Sesame ginger
Cheddar chipotle
Sun-dried tomato and parmesan

For this recipe, you only need 3 pantry ingredients. So simple!

Ingredients:

2 cups cooked quinoa
2 eggs
1.5 - 2 Tbsp Dyno-moms taco seasoning**

Directions:

Grease a mini muffin pan.***
Preheat oven to 350 degrees. 
Mix all ingredients together in a bowl. 
Place a heaping spoonful in a mini muffin tin. 
Bake for ~ 20 minutes, just until sides start to brown. 


I do refrigerate leftovers because they contain egg.


** My favorite homemade taco seasoning by far. I use hers in so many recipes. 

***You definitely want to use some type of non-stick spray because sometimes they stick. I did not use it the first time and what a HUGE pain it was to try to clean that muffin pan. I guess I could have used some oil. Live and learn.
