This simple, homemade dressing has a great combination of tanginess and sweetness with the blue cheese and balsamic vinegar.

Blue cheese dressing is definitely a favorite in our house. For the longest time I would just make a standard creamy blue cheese from scratch. Then years ago my brother asked if it was possible to make a non-creamy version. I tinkered (yes, I tinker) and I came up with a blue cheese vinaigrette with only 4 pantry* ingredients.

This homemade dressing can be whisked with a fork easily. No special equipment required. But just for fun the other day I used my immersion blender to mix the ingredients and it turned out to be a creamy blue cheese but with that same tanginess not found in traditional blue cheese dressing.

Ingredients
6 Tbsp light flavored oil - light olive oil, organic canola oil, grapeseed oil
2 Tbsp balsamic vinegar
~ 4 oz blue cheese crumbles
1 tsp honey

In a small bowl, whisk all ingredients together.

This version is for the creamy blue cheese balsamic vinaigrette.

In a cup with tall sides, ~ 16 oz., take an immersion blender and blend all the ingredients until smooth and creamy.


*Why "pantry" ingredients instead of just ingredients? When I say ingredients, I always mean a single ingredient - a food item made up of one thing. Olive oil is one ingredient, honey is one ingredient, balsamic vinegar is one ingredient, but blue cheese is made up of several. So in order to be consistent with my terms I will use the term "pantry ingredient" when it is one item but itself made up of several ingredients. For more recipes that have actually 10 ingredients or less
