What are pumpkin cakies?


Cakies* is a term to describe cookies that are not as thin and crispy as a cookie. These are the type of cookies I prefer. Fluffier, lighter, and they tend to be not quite as sugary. For this particular cookie, I used a pre-made cake mix.

I love the idea of using a cake mix to make cookies. It is a simpler way to make cookies quickly. You might be saying to your computer screen right about now "Suzy, cake mix is NOT a real food!" True. There are many cake mixes out there that have a long list if ingredients you may want to avoid. But luckily there are some that are not as bad. The one I had in my pantry happened to be gluten-free, but you don't have to use a gluten-free mix. The mix I used for these cookies was...




Gluten Free Vanilla Cake Mix

The ingredients list is not so bad.

Sugar, potato starch, tapioca flour, whole grain sorghum flour, baking powder (monocalcium phosphate, bicarbonate of soda, cornstarch), sea salt, xanthan gum, natural vanilla powder (sugar, cornstarch, vanilla extract).

An even better option would be to have some homemade cake mix** in your pantry ready to go. 


Ingredients

Vanilla Cake Mix - I used Gluten Free Vanilla Cake Mix
1 can (15 oz) pumpkin puree
2 drops each cinnamon essential oil, nutmeg essential oil, clove essential oil, ginger essential oil***


Directions

Heat oven to 325 degrees. Mix the cake mix, pumpkin puree, and oils in a bowl until combined. This creates a much thicker dough than cake batter. Drop ~ 1 tbsp of dough onto a cookie sheet. These really did not spread much for me, so you do not have to worry about placing the dough mounds close together. Bake for 8-12 minutes. 

I bet these would taste great with some cream cheese frosting.
